Abstract

Heat resistance of Bacillus cereus ATCC 4342 spores produced at different pHs of sporulation was investigated. D-values were very influenced by the pH of the medium, showing differences of about six-fold. The pH of sporulation medium which yielded the most thermoresistant spores depended on the type of medium used, 7,5 with nutrient agar and 6,2 with Angelotti medium. z-Values were not significantly affected.
